Now I’m not really big on salads and dressings but my girlfriend has been nagging at me for about a week now to make her a great paleo salad dressing to go along with her signature smoked salmon recipe so I figured I would go to my trusty paleo recipe book where I found a classic vinaigrette, its very versatile, but it goes very well on salads with fresh herbs or smoked salmon. Hope you guys enjoy!
1: Follow the general preparation technique by combining
all the ingredients except the oil and then
adding the oil slowly while whisking vigorously.
Using a blender will help to emulsify the vinaigrette.
Shake well before using.
• 3 tbsp fresh lime or lemon juice;
• 1/2 tsp Dijon mustard, optional;
• 3/4 cup extra-virgin olive oil;
• Sea salt and freshly ground black pepper
