I cooked up this recipe during the super bowl when I had all my buddies come over and for some reason I had this HUGE craving for bacon that night..(well actually it’s every night.) Now my girlfriend was nagging at me that night to make her meatloaf so I thought Hmm how do I make her happy but also satisfy my craving for bacon, so of course I went to my trusty paleo recipe book and I found this great paleo meatloaf with bacon recipe and this one also calls for marinara to give it that extra zing! But here you go, it came out great for me hope you guys enjoy!
What you need:
• 1 lb ground pork
• 2 lbs ground beef
• 1 cup almond flour
• 2 eggs;
• 2 cups homemade marinara sauce;
• 10 slices bacon
• Sea salt and freshly ground black pepper
to taste;
• 3 tbsp chopped fresh ginger
1: Preheat your oven to 350 F.
2 :Mix the ground meat with the almond flour, eggs
and half the marinara sauce together in a bowl. Season
with sea salt and freshly ground black pepper to
taste.
3: Form two loafs in snug fitting baking dishes and
cover the loafs with the bacon slices.
4: Put in the oven to bake for about 45 minutes, until
well cooked.
5: Put the oven on broil for another 10 minutes to crisp
up the bacon.
6: Remove the loafs from the oven and let cool for a
few minutes.
7: Heat the rest of the marinara sauce on the stove top.
8: Slice the loafs, serve into plates and top with the hot marinara sauce.
