I had my parents for dinner a few days ago, now they don’t visit much often because of the long distance but when they do visit, I love to impress them with my cooking skills, Seeing how I was never a healthy eater when I was a kid and my mom knows how passionate I’ve become about my paleo diet. So anyways my mom is known for making the best meatloaf in my opinion so I thought I would try something different tonight and for some reason I was thinking bison, and the paleo recipe book certainly did not disappoint me with this recipe because especially my dad loved it, he recalled how much he loved the gamey taste. But you guys can check it out for yourself and let me know what you think.
What You Need:
• 2 cups almond flour
• 1/3 cup coconut milk
• 2 cloves garlic, minced
• ½ cup carrot, grated
• ½ cup zucchini, grated
• ½ cup onion, grated
• 1 lb ground bison
• 1 egg
• ¼ tsp fresh rosemary, minced;
• Cooking fat
• Sea salt and freshly ground black pepper
to taste
1: Preheat your oven to 350 F.
2: In a bowl, combine the coconut milk with the
almond flour. Put aside.
3: Heat a skillet over a medium heat and cook
the carrots, zucchini, garlic and onion in some
cooking fat until the vegetables start to brown.
4: Put the cooked vegetables in a bowl and pour
in the coconut milk and almond flour mixture.
Also add the ground bison, egg and rosemary.
Mix well. Season with salt and pepper to taste.
5: Form a loaf in a 4 x 9 inches loaf pan and place
in the preheated oven to cook for about 45
minutes.
